Another Blog Challenge from Stacy...

Favorite/Memorable/Noted for Recipe(s)

My mom used to make oatmeal clusters. Loved those cookies. I remember Uncle Tim bbq'ing chicken legs and that crispy skin (neither of my parents ever bbq'd). When I was in high school, a friend of my dad's made chicken and dumplings. I thought I'd died and gone to heaven. I don't know if it was "the times" or what, but I do recall eating a lot of "Joe's Special" (made by my mom, scrambled egg, spinach, and onion maybe?), and when I lived with my dad, I made a lot of Hamburger Helper. My dad would fry bologna.

And then my world changed. I went to nanny for a single dad and his son. John taught me how to make manicotti. He was a vegetarian, so we ate a lot of pasta and meatless things. When he was due to be gone for dinner, Sean and I would have fried pork chops and mashed potatoes!

As an adult, my "signature" dessert is carmelitas. If we go to a bbq or a party, I'm asked to bring that and/or pasta salad. One of the things I love to eat is chicken/broccoli/rice casserole. Today while I was making it, I was thinking the next time I cook, it needs to be tacos.

It's a cold winter night. Fire going in the wood stove, and chicken/broccoli/rice casserole on the menu. Yum yum!
